Ingredients: Dijon mustard, garlic, olive oil, lemon juice, black pepper, chicken broth, water, cornstarch, red pepper flakes, sea salt, Smart Balance butter, orange marmalade
Thaw 1-2 days in refrigerator before cooking. Discard marinade and sauté chicken in 2 tablespoons olive oil over medium-high heat 8 minutes per side. Remove chicken from skillet. Add broth mixture to skillet, bring to boil, stirring constantly until thickened. Reduce heat to medium and stir in marmalade mixture until butter is melted. Return chicken to skillet. Reduce heat to medium-low and simmer for 2-3 minutes or until internal temperature reaches 175º. Serve chicken over a bed of rice and spoon sauce over chicken. Sprinkle with toasted almonds.
